I promised DH I'd make a meatloaf, so meatloaf and mash tonight, chicken and chips and salad tomorrow I think.

I'm trying to eat the freezer so I can defrost and reorganise it.

Last night we had garlic roast lamb (for them), potatoes, cauliflower and broccoli bake, corn on the cob and peas. Tonight I’ll do a lentil bolognese for DS, it’s his favourite.

A vague stocktake this morning, it may not be correct!

Two dinners of chicken kiev

One dinner of pesto pasta

At least three dinners of roast lamb

One dinner chicken kebabs

One dinner chicken wings and fried rice

Two dinners chicken curry (will eat tonight)

Two dinners chicken parmas

I think DH has bought enough chicken, thank you

Two dinners enchiladas

I also want to make some more beef stroganoff, but all the chuck steak was sold out the other day, maybe everyone else wants to cook beef stroganoff as well.

Tonight, it's all about that comfort food vibe! I'm doing a classic spaghetti carbonara. Just some eggs, parmesan, pancetta, and spaghetti, nothing fancy but oh so delicious. Super quick and easy for a midweek dinner, plus everyone in the house loves it. I usually toss in some peas for a pop of colour and to sneak in those veggies.

I scratched the roof of my mouth with my nachos last night and now I'm grumpy.

This would be my DD’s absolute favorite dinner of all time 🥰

Update: we are no longer Vegetarians and have morphed into Pescatarians eating 2 seafood meals a week. (More next week as a have a “prawn date” with an extra special friend.

Last night’s dinner was a winner, very very very shallow fried flat head tails w rocket, shaved cheese & Cobram cold pressed olive oil/balsamic vinegar salad

10 minute mid week dinner sorted
