And a zucchini slice and zucchini soup from the last of the giant zucchini’s also from the garden haha! am thinking maybe a massamun beef curry tonight if I get time to put it on. Monday - fast day - bowl and DD will make herself scrambled eggs and frozen vegetables. Tuesday - Mexican Wednesday - Dad will be over with my aunt and uncle so may be going out to dinner. Kallie Posted March 17 Share Posted March 17 Haha I have to make the menu plan legible so DH can do his night (Tuesday) And yes, L/O = leftovers. I try to do a bulk cook on the Wednesday (my day off) then use the extra the next week on one of my work days (usually Friday). First term this year has been really full on so a lot of these are a lot simpler than I'd usually like, but the kids haven't complained. Some things have been missed. And Tuesday as well because DH is away and the kids like it. @Kalliehas inspired me to do a roast. So maybe that can be for Wednesday. I’ll buy a chicken or maybe a bunch of chicken thighs, and do roast veg. and later in the week, I want to use up some smoked salmon. Maybe pasta? Salmon mornay? Silverstreak Posted March 21 Share Posted March 21 Growing up, we had food left for Ron (that's Later On, ha ha, such Dad humour). I roasted a leg of lamb last night and we had it in salad wraps with garlic mayo, nom nom. Having that again tonight. I marinated the lamb in red wine and garlic and then covered it in olive oil and salt before slow roasting, it turned out really nice. DH has requested chicken pesto pasta from the freezer, so we're having that tomorrow night. I'm going to be busy on Sunday, so on Saturday I'm slow cooking braised steak and onions and we'll have that again on Sunday. Monday will be busy, so we'll probably have lasagne from the freezer. From Tuesday I'm on holidays for 10 days! DH bought a duck kit and we have a cucumber to use up, so DH can do peking duck pancakes if he feels like cooking. The rest of the week, I have no idea. We have chicken curry, lasagne, beef enchilada filling, chicken pesto pasta, chicken kiev, steak, roast lamb, roast beef, braised steak and chicken schnitzel in the freezer, so I don't plan on doing any cooking except vegetable/salad side dishes for the next couple of weeks, woohoo!
